Turmeric Couscous with Navy Beans and Cherry Tomatoes

Ingredients
  • 1 cup couscous
  • 2 gloves garlic finely chopped
  • 1 shallot chopped
  • 2 cups cherry tomatoes halved
  • 1 can navy beans drained
  • 1 lemon
  • ¼ cup fresh parsley chopped
  • 2 tsp turmeric powder
  • ¼ tsp sea salt
  • ¼ tsp cumin
  • pinch of cayenne
Instructions
  1. Bring 1 ¼ cup of water to a boil. Add 1 cup of couscous, 1/8 tsp sea salt and 2 tsp of turmeric powder and stir. Cover and simmer for 8-10 mins.
  2. While couscous is cooking, heat up a medium non-stick pan over a medium heat. Add garlic, shallots and cook for 1 minute. Then add cherry tomatoes and for 2-3 minutes. Turn off the heat.

  3. In a separate bowl, mix turmeric couscous, navy beans, juice of 1 lemon, ¼ tsp of sea salt, ¼ tsp of cumin and a pinch cayenne.
  4. Then add cooked cherry tomato mixture to the bowl and mix. Garnish with parsley.
