Ingredients
  • 1/2 cup of quinoa
  • 1/2 tomato chopped
  • 1/2 cucumber chopped
  • 5 to 6 olives
  • salt and pepper to taste
  • lettuce
Instructions
  1. Rinse quinoa with cold water. Transfer to a small pot over medium heat. Toast quinoa for 5 minutes. This will bring out the nutty flavor of quinoa. Make sure to stir continuously to prevent quinoa from burning.
  2. Once quinoa is toasted after 5 mins, add water to the pot completely covering quinoa plus extra 1/2 inches. Bring to boil, then cover with a lid and simmer for 10-15 mins or until water is fully absorbed.
  3. Mix the rest of the ingredients together and place over lettuce leaves. Optional: top with olive oil or vinegar.
