Easy 10-minute Thai Peanut Sauce recipe that is perfect for spring rolls and noodles!

Ingredients
  • 1 tbsp olive oil
  • 1 jalapeno pepper, seeds removed and minced
  • 3 garlic cloves, minced
  • 1 tbsp fresh grated ginger
  • 1 1/2 tsp curry powder
  • 1/2 cup water
  • 1/3 cup creamy peanut butter
  • 2 tbsp soy sauce
  • 3 tbsp rice vinegar
  • 1 tbsp coconut sugar or brown sugar
  • 1 tsp peanuts, chopped fine
Instructions
  1. Heat oil in a small pot over medium heat. Add jalapeno, garlic, ginger, and curry powder and cook for 30 seconds, stirring continuously.
  2. Add water, peanut butter, soy sauce, vinegar, and sugar. Mix with a whisk until well combined. Cook, stirring continuously, until the mixture becomes creamy. Add more water, 1 tbsp at a time, as needed to adjust consistency.
  3. Top with chopped peanuts when serving.
  4. Store in a glass jar in the fridge for up to 5 days.
