Quick, easy and delicious dip made from Sweet Red Peppers. It is soft, sweet and aromatic making it a perfect appetizer for family gatherings and entertaining.

Ingredients
  • 1 sweet red bell pepper, chopped
  • ½ cup fresh carrots, chopped
  • ½ cup red onions, chopped
  • 2 garlic cloves
  • ½ cup fresh cilantro
  • 1 tbsp sweet paprika
  • 1 tsp turmeric
  • 1 tsp coriander
  • ¼ tsp sea salt
  • 1/3 cup tomato paste
  • Pinch of cayenne pepper
  • 1 tbsp olive oil
Instructions
  1. Heat non-stick pan on a medium heat. Add olive oil and let it heat up for 30 seconds. Add red peppers and cook for 2 mins.
  2. Add carrots and cook for 2 more mins.
  3. Add onions and garlic. Stir and cover with a lid. Cook until soft. Take off the heat and let cool.

  4. Once the mixture is completely cool, transfer into a food processor or high speed blender. Add all the remaining ingredients: cilantro, tomato paste and the spices. Blend together.
  5. Serve with chips, vegetables or use as a spread on a toast.
