Ingredients
Sweet Potato Noodles:
  • 3 sweet potatoes spirilized
  • 1/8 tsp sea salt
  • pinch of black pepper
  • 1 tbsp olive oil
Almond Pesto:
  • ¼ cup toasted or raw almonds
  • 1 garlic clove
  • 1 ½ cup fresh basil
  • ½ cup extra virgin olive oil
  • salt and pepper to taste
Other:
  • 1 cup cherry tomatoes
Instructions
  1. Heat up the oven to 400F.
  2. Toss spiralized sweet potatoes in olive oil, sea salt and pepper. Place on a baking sheet and bake for 30 mins.
  3. While sweet potatoes are baking, make Almond Pesto by mixing all the ingredients in a food processor or a blender and blend until everything is well mixed and creamy.

  4. Once sweet potatoes are baked, toss them lightly in Almond Pesto and add cherry tomatoes.
