Ingredients
  • 1 acorn squash
  • 1 cup pomegranate seeds
  • 2 garlic cloves
  • 1 tbsp olive oil
  • 1.5 tsp chili or chipotle powder
  • 1 tbsp ground sage
  • 1 tbsp ground thyme
  • ΒΌ tsp sea salt
  • 1/8 tsp black pepper
Instructions
  1. Heat oven to 400 F / 200 C.
  2. Cut acorn squash in half and scoop all the seeds. Then cut it into approx. 3-inch slices.

  3. Place acorn squash in a large bowl. Add olive oil and all the spices. Toss to ensure each slice is evenly coated.
  4. Place on a baking sheet and bake for 25 mins. Let cool.
  5. Add pomegranate seeds right before serving.
