Ingredients
  • 1 cup spaghetti squash cooked
  • 1 garlic clove crushed
  • ½ onion shopped
  • ½ cup of mushrooms chopped
  • ½ cup cherry tomatoes
  • 1 tsp olive oil coconut oil or oil of choice
  • sea salt
Instructions
  1. Prepare spaghetti squash according to the instructions in post: How to Make Spaghetti Squash. It takes about 1 hour.

  2. Heat up a skillet on medium heat. Spray olive oil or another oil of choice and add garlic. Cook for 1 minute.
  3. Add onions and cook until soft.
  4. Add mushrooms and sprinkle sea salt. Cook for about 2 minutes.
  5. Add cherry tomatoes and cook for another 3 to 4 minutes until tomatoes are soft.
  6. Turn off the heat. Stir in 1 cup of spaghetti squash and mix thoroughly with the vegetables.
