This rich and hearty Smoked Lentil Winter Stew is the perfect remedy for the cold winter days. It’s healthy, made from simple ingredients, and freezer-friendly!

Ingredients
  • 2 garlic cloves
  • 1 onion
  • 1 cup chopped carrots / approx. 2 medium sized carrots
  • 2 cups green lentils (uncooked)
  • 8 cups vegetable stock
  • 2 tbsp smoked paprika
  • 2 tsp sea salt
  • ¼ tsp pepper
  • 1 tbsp olive oil (sub for water if oil-free)
  • 1 tbps agave or maple syrup
  • 2 cups spinach
  • 1 bunch scallions
Instructions
  1. Heat olive oil in a large pot over medium heat. Caramelize garlic and onions, about 3-4 minutes.
  2. Add carrots and cook for 3 minutes.
  3. Add lentils, stock, and the seasoning. Bring to boil, cover with a lid, and simmer on low heat for 25 minutes until lentils are cooked all the way through. Turn off heat.

  4. Add spinach and stir. Spinach will soften in about 5 minutes.
  5. Serve with brown rice, farro, or quinoa. Garnish with chopped scallions before serving.
  6. Note: the stew will be chunky i.e. there won’t be much liquid. If you prefer your stew less
  7. chunky, add 1 additional cup of vegetable stock to the recipe.
