Delicious Roasted Sweet Potato Noodles paired with juicy baked pears and crunchy buttery pecans that will take your sweet potato obsession to the next level!

Ingredients
  • 5 sweet potatoes
  • 2 pears chopped
  • 2 tbsp olive oil
  • 1/4 tsp salt
  • dash of pepper
  • 1/4 cup pecans chopped
  • 1 cup fresh spinach
Instructions
  1. Preheat oven to 350F.
  2. Peal sweet potatoes and spiralize them. I use my favorite kitchen aide attachment. *If you don’t have a spiralizer then you can either buy spiralized sweet potatoes at the grocery store or simply chop potatoes into cubes.
  3. In a big bowl, combine sweet potatoes, pears, olive oil, salt and pepper and mix with hands.
  4. Arrange on a baking sheet and bake for 30 minutes.
  5. After baking, add chopped pecans and spinach.  You want to mix in spinach with sweet potatoes while they're hot so that spinach can "cook" a bit and get soft.  

  6. Serve warm or cold.
