Ingredients
  • 1/2 cup mashed banana (approx. 1 large banana)
  • 1/2 cup coconut flour (can sub for almond or oat)
  • 1/4 cup nut or seed butter (peanut butter, almond butter, sunflower seed butter, etc.)
  • 1/4 cup liquid sweetener of choice such as maple syrup or agave
  • 1 tsp vanilla extract
  • 2 tbsp dairy-free chocolate chips
  • 2 tbsp coconut flakes
Instructions
  1. Mash banana with a fork in a mixing bowl. Add coconut flour, nut/seed butter, liquid sweetener, and vanilla extract. Mix well with a spatula until all ingredients are well-combined.
  2. Transfer to a flat square container or small baking dish. Press the batter to make sure it’s tightly packed. Top with chocolate chips and coconut flakes.
  3. Put in the fridge for 2 hours. Cut into squares and enjoy.
