Quick and tasty sandwich with grilled veggies!

hummus

of gluten-free bread or bread of choice

Grill peppers, onions, tomato and cucumber slices over medium heat. You can grill all veggies in one large pan.*

Spread mashed avocado and hummus onto 2 slices of bread and add grilled vegetables. Add salt and pepper to taste
*I find that grilling peppers with a closed lid expedites the cooking process.
