Easy, simple, and healthy vegan pancakes that are super fluffy and extremely delicious! This is the best basic vegan pancake recipe that you can customize to your liking!

Ingredients
  • 1/2 cup flour (whole-wheat or white)
  • ½ tsp baking powder
  • 1/2 tsp cinnamon
  • 1 tbsp sugar (white, brown, coconut, maple syrup, or agave)
  • 1/8 tsp salt
  • 1/2 cup dairy-free milk
  • 1 tbsp coconut oil, melted
  • ½ tsp vanilla extract
  • Optional toppings: chocolate chips, berries, bananas
Instructions
  1. Mix all ingredients in a bowl using a whisk.
  2. Heat a non-stick pan and pour ½ of batter. If you are using toppings, add them to the batter now. Cook for 3-4 minutes on each side.
  3. Serve with more toppings, vegan yogurt, or maple syrup or agave.
