Homemade, healthy, vegan Energy Bar recipe from dates that is delicious and easy to make. It’s perfect as a snack, breakfast on-the-go, or as pre-work out!

(unsweetened, vanilla, or chocolate)

Note: feel free to add more protein powder to increase the protein content

Preheat oven to 350F / 120 C.

Bring all ingredients together in a food processor or high-speed blender and blend until well combined. If the mixture is too dry, add 1 tbsp water at a time. If the mixture is too wet, add 1 tbsp of oats a time.

Spread the mixture in a small pan. If you don’t have a very small pan, you can use a larger one just flatten the mixture along one side of the pan.

Bake for 20 minutes. Let cool an cut into squares.

Store in an airtight container in the fridge for up to 2 weeks.
