(about 4 medium Russet potatoes)

olive oil for pan frying

Peel and wash potatoes. Grate them using a handheld grater or mandolin.

Squeeze as much moisture as you can from grated potatoes using a kitchen towel, paper towel, or cheese cloth. Transfer grated potatoes back into a bowl.

Add remaining ingredients and stir well. Start forming patties with your hands by using 2 tbsp of mixture.

Heat oil in a nonstick pan over medium heat. Pan fry latke patties for about 5 minutes on each side, until fully cooked.
