Simple, crispy latke recipe that can also be made gluten-free! It’s perfect as an appetizer, snack, or a side vegetable.

Ingredients
  • 2 cups grated potatoes (about 4 medium Russet potatoes)
  • 1 tbsp cornstarch
  • 1/3 cup all-purpose flour (can sub for gluten-free flour)64
  • ½ tsp baking powder
  • 1 tsp salt
  • 1/8 tsp pepper
  • 1-2 tbsp olive oil for pan frying
Instructions
  1. Peel and wash potatoes. Grate them using a handheld grater or mandolin.
  2. Squeeze as much moisture as you can from grated potatoes using a kitchen towel, paper towel, or cheese cloth. Transfer grated potatoes back into a bowl.
  3. Add remaining ingredients and stir well. Start forming patties with your hands by using 2 tbsp of mixture.
  4. Heat oil in a nonstick pan over medium heat. Pan fry latke patties for about 5 minutes on each side, until fully cooked.
