  • 1 block extra-firm tofu
  • 1 cup unsweetened coconut flakes

  3. Cut tofu into small squares. There is no need to squeeze the water.
  4. In a large bowl combine coconut flakes and tofu. Toss tofu to coat it with coconut flakes.
  5. Place tofu on a baking sheet and bake for 25 minutes.
  6. Serving suggestions: over rice, in a salad, in a sandwich.
