Ingredients
  • 1/2 can chickpeas
  • 1 tbsp nutritional yeast
  • 1/2 tsp smoked paprika
  • salt and pepper to taste
  • 2 tbsp vegan mayonnaise
  • 1/4 avocado
  • 2 slices of preferred bread GF, Ezekiel, whole grain, whole wheat, etc.
Instructions
  1. Mash chickpeas with a fork in a small bowl. Leave the mix slightly chunky.
  2. Add mayonnaise, nutritional yeast, smoked paprika, salt and pepper to taste. Mix everything.
  3. Mash ¼ avocado and mix in.
  4. Spread the Chickpea Salad on top of the toasted bread and top with fresh spinach and purple cabbage. Customize toppings to your liking.
