Crispy Cauliflower Tacos that will make you happy!

Ingredients
Tacos
  • 2 cups chopped cauliflower
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp sea salt
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • chopped lettuce or mixed greens
  • 4 gluten-free tortilla shells
Chipotle Aioli
  • 1/2 cup vegan mayonnaise
  • chipotle in adobo sauce: 1 small pepper + 2 tsp of sauce
  • 1 tsp lemon juice
  • 1 tsp maple syrup or agave
Instructions
  1. Preheat oven to 400 degrees.
  2. Toss cauliflower with oil and spices in a bowl and bake for 20-25 mins until brown and tender.
  3. To make chipotle aioli, combine all ingredients in the food processor and blend for a few seconds until peppers are pureed and all ingredients are well combined.
  4. To make tacos, spread chipotle aioli on the tortilla shell, add fresh lettuce and top with cauliflower.
