Crispy on the outside and super moist on the inside, these vegan sugar-free Blueberry Waffles are a true symbol of the weekend freedom!

Ingredients
  • ½ cup spelt flour
  • 2 tsp baking powder
  • 1/8 tsp sea salt
  • ½ cup blueberries, frozen or fresh
  • ½ lemon, juice and zest
  • ¼ tsp vanilla extract
  • 1 tsbp coconut oil
  • 1/3 cup water
Instructions
  1. Combine all dry ingredients in a bowl. Then mix in wet ingredients. Whisk well to combine.
  2. Pour mixture into a waffle maker and cook for 3 minutes.
  3. Note: To make one large waffle pour the entire mixture in the waffle maker at once. Alternatively, pour half of the mixture at a time to make two medium waffles.

  4. Top with more blueberries and agave syrup, if desired.
