Crispy Artisanal Eggplant Fries that guarantee a perfect bite! Delicious savory herbs carefully coat each fry that are baked to perfection!

Ingredients
  • 1 large eggplant
  • Wet Mix: 2 tbsp ground flax seeds + ¼ cup water
  • Flour Mix: 1 cup gluten-free flour + ½ tsp salt + ¼ tsp pepper
  • Breadcrumbs Mix: 1 cup gluten-free breadcrumbs + 3 tbsp nutritional yeast + 1 tsp oregano + 1 tsp smoked paprika
Instructions
  1. Preheat oven to 425F.
  2. Peel the skin off the eggplant and cut it into long “french fry” strips.
  3. Dip into the flour mix, then then wet mix, then the breadcrumbs mix.
  4. Place eggplant fries on the baking sheet and bake for 25 mins.
  5. Serve with ketchup or vegan tzadziki sauce.
