Ingredients
  • 1 tbsp olive oil
  • 1/2 tsp cumin seeds
  • 1/2 tsp mustard seeds or 1 tsp mustard powder
  • 2 tsp curry powder
  • Optional: 1 tsp chili powder
  • 1 medium onion, diced
  • 1 medium tomato, diced
  • 1 green chili, diced
  • 1 cup red lentils
  • 1 can coconut milk
  • 1/4 cup chopped fresh cilantro
Instructions
  1. Heat oil in a medium saucepan. Make sure the oil is hot. Add cumin and mustard seeds and toast the seeds for 30 seconds. If you’re using mustard powder, toast only the cumin seeds.
  2. Add curry powder and cook for another 30 seconds, stirring continuously.
  3. Add chopped onion and cook for 2 minutes until onion is translucent. Add green chili and cook for 1 minute. Lastly, add chopped tomatoes and cook for another minute.
  4. Stir in coconut milk and add red lentils. Bring to a boil, cover with a lid, and simmer on low heat for 15-20 minutes until lentils are fully cooked.
