Tofu Scramble with Vegetables

Some mornings, you just crave a good savory breakfast. Not overnight oats. Not smoothie bowls. Not chia puddings. Just good old scramble to enjoy along with your coffee and a crispy sprouted whole grain toast.

You feel me?

I wouldn’t say it’s a constant back and forth between sweet and savory. It is that we need diversity. Diversity of breakfast. The questions is – what are your options as a vegan when you crave a savory breakfast? More precisely – a scramble of some sort?

My tried and fave options are: this tofu scramble we’re making right now and the chickpea scramble.

Why to pick tofu to make a scramble, you may ask? Because tofu crumbles well. To make a scramble you need something that is crumbly and soft at the same time. #cookingiscomplicated

Secondly, tofu is like a sponge and it absorbs any spices you add to it. Perfect to make it just the way you like it 😉

A few interesting facts about tofu:

  • Contains all of 9 essential amino acids.
  • ½ cup of tofu has 10 grams of protein.
  • It’s rich in Calcium (43% of daily value) and Iron (36% of daily value).
  • Naturally gluten-free.
  • Doesn’t have any cholesterol.

For this tofu scramble recipe I suggest you go with extra-firm tofu. If you’re a tofu newbie, “extra-firm” may sound like it is a rock hard solid piece of tofu, which isn’t true at all. To be honest, I’m not even sure why they call it extra-firm. It is certainly firmer than a non-firm kind (such as silken tofu) but it’s still pretty soft. Using extra-firm tofu in this recipe will ensure that your scramble hold its shape. It’ll make more sense once you start making it, promise!

Vegan Tofu Scramble with Vegetables

10-minute easy to make Tofu Scramble with Veggies that will deliver the savory breakfast you crave!

Course: Breakfast
Cuisine: American
Servings: 1 serving

Ingredients
  • 4 ounces extra-firm tofu
  • leafy greens: spinach, kale, mixed greens or arugula
  • 1/4 cup red or yellow pepper, chopped
  • 1/4 avocado, diced
  • salt and pepper
Spice sauce ingredients:
  • 1 tsp turmeric
  • dash of cumin
  • salt and pepper to taste
  • 2 tbsp water
Instructions
  1. Heat a non-stick pan over medium heat. 

  2. While the pan is heating, make your spice sauce by mixing all the spices with water in a small bowl. 

  3. Take the block of tofu and squeeze the water out with your hands over the sink. Try to get as much water out as possible. 

  4. Crumble tofu with your hands as you throw it into the pan (you can also crumble with a fork if you’d like). Pour the spice sauce over it and stir. 

  5. Let cook for 2 to 3 minutes. Transfer to a dish and set aside. 

  6. Cook red peppers with some oil, salt and pepper in the same pan for 5 minutes. 

  7. Add the cooked red peppers with the rest of the vegetables to tofu scramble and enjoy!
