It looks mysteriously ordinary. But don’t be fooled. The taste is simply to die for.

So, what is this dip made from, you may ask?

It’s made from the most delicious bell peppers – Sweet Red Peppers. We will begin by caramelizing them along with chopped carrots, onions and some garlic. Then add a little tomato paste, add several spices, fresh cilantro and blend it together.

It is that simple.

I was in such a hurry when I made this dip the first time, that I barely waited for my red pepper mixture to cool before blending. Thankfully, my Blentec could handle it. I will never admit this to my husband, who would probably have a heart attack if he found out.

This brings me to how I ended up making this dip in the first place.

You see, sweet red bell peppers are my favorite peppers. I always have one or two in my fridge. It is something I always buy at the grocery store every week.

One day, we had our friends come over on very short notice. We weren’t in a mood to make a full-blown dinner, but I did want to make something quick and delicious. I was feeling too comfortable to go downstairs to the store, so I decided to make a dip using the ingredients I already had on hand.

I wasn’t exactly sure how it would come out. I thought if it were a disaster, I’d simply put out my hummus and salsa and call it a day.

But….

When I licked the spoon after everything was blended, oh my! I couldn’t believe how good it tasted. The dip had intense deep flavors of all the vegetables we’ve roasted. It was subtly sweet from red peppers, a tiny little bit spicy, overwhelmingly umami from the tomato paste and had a fresh taste from cilantro.

Mysteriously ordinary. Told ya!

Quick, easy and delicious dip made from Sweet Red Peppers. It is soft, sweet and aromatic making it a perfect appetizer for family gatherings and entertaining.

Ingredients
  • 1 sweet red bell pepper, chopped
  • ½ cup fresh carrots, chopped
  • ½ cup red onions, chopped
  • 2 garlic cloves
  • ½ cup fresh cilantro
  • 1 tbsp sweet paprika
  • 1 tsp turmeric
  • 1 tsp coriander
  • ¼ tsp sea salt
  • 1/3 cup tomato paste
  • Pinch of cayenne pepper
  • 1 tbsp olive oil
Instructions
  1. Heat non-stick pan on a medium heat. Add olive oil and let it heat up for 30 seconds. Add red peppers and cook for 2 mins.
  2. Add carrots and cook for 2 more mins.
  3. Add onions and garlic. Stir and cover with a lid. Cook until soft. Take off the heat and let cool.

  4. Once the mixture is completely cool, transfer into a food processor or high speed blender. Add all the remaining ingredients: cilantro, tomato paste and the spices. Blend together.
  5. Serve with chips, vegetables or use as a spread on a toast.
