Roasted Sweet Potato Noodles with Pears and Pecans

Delicious Roasted Sweet Potato Noodles will take your sweet potato obsession to the next level! Paired with juicy baked pears and crunchy buttery pecans, this dish will knock your pears off!

Who else is obsessed with sweet potatoes? I’m still on a sweet potato french fry kick and seriously frown upon a burger place that doesn’t carry a sweet potato fry option – it should be standard right?!

First reason is that sweet potatoes are simply sweeter than the regular potatoes. They give off notes of vanilla when cooked…almost sounds like dessert! Haha! Sweet potatoes are also more nutritious compared to regular ol’ tators – more complex carbs. We all love complexity!

So, my friend, if you’re looking to up your sweet potato game, this delicious roasted sweet potato noodle recipe is for you! I first made this during the holidays in December, but in all honesty, it’s awesome year around. I mean it’s sweet potatoes we’re talking about here…

If you own a spiralizer such as Kitchen Aide attachment or a manual one, then you can simply peel the sweet potatoes and put them through a spiralizer. If you don’t own one, then find a grocery stores that sells them pre-packaged (I’ve seen them in many grocery stores like Wegmans, Fairway and Wholefoods). If you can’t find those noodles anywhere, another option would be to simply chop them into squares. This doesn’t have any impact on the taste, it’s simply a different potato shape.

Once you’ve got your potato shape situation sorted out, let’s get cooking! We will be pairing our sweet potatoes with baked pears – which is such a tasty combination. Baked pears add fresh juiciness and delicate floral hints to our dish. We’ll also be adding chopped pecans for crunchy texture and a buttery sweet taste.

All these three ingredients, sweet potatoes + pears + pecans are sweet, but in different ways. They also have different textures which complement each other. Sweet potato is soft with vanilla notes, pear is juicy with floral notes and pecans are crunchy with nutty flavor.

To finish off, we’ve also added some spinach to break-up the sweetness in our dish. If you toss in spinach right after you get the sweet potatoes with pears out of the oven, spinach will lightly cook and mix in nicely (oh yum!).

Ingredients
  • 5 sweet potatoes
  • 2 pears chopped
  • 2 tbsp olive oil
  • 1/4 tsp salt
  • dash of pepper
  • 1/4 cup pecans chopped
  • 1 cup fresh spinach
Instructions
  1. Preheat oven to 350F.
  2. Peal sweet potatoes and spiralize them. I use my favorite kitchen aide attachment. *If you don’t have a spiralizer then you can either buy spiralized sweet potatoes at the grocery store or simply chop potatoes into cubes.
  3. In a big bowl, combine sweet potatoes, pears, olive oil, salt and pepper and mix with hands.
  4. Arrange on a baking sheet and bake for 30 minutes.
  5. After baking, add chopped pecans and spinach.  You want to mix in spinach with sweet potatoes while they're hot so that spinach can "cook" a bit and get soft.  

  6. Serve warm or cold.
