Granola is so dang versatile. It simply goes with everything! You can eat it for breakfast, lunch, dinner, and a snack and feel amazing because there is zero prep time!

Some common places and times where you can eat granola:

  • Instead of cereal for breakfast with almond milk.
  • At the office as a mid-morning snack.
  • During commute…just keep a zip log back in your purse to avoid buying that pastry by the subway stop that’s been strategically placed by the shop owner.
  • To top off your dairy-free cashew yogurt.
  • As an added crunch in chia pudding.
  • In a salad for lunch…because it’s all about that crunch 😉
  • Give it to your nephew/niece on a playground to get them to stop crying.
  • Pre-workout.
  • Post-workout.

Pumpkin Spice Granola

If you’ve never made granola at home – have no fear! It’s easy! I never understood why granola costs so much at the store. You can make two 16 ounce mason jars full of granola for about 5 dollars total. Now, that’s a deal.

Plus, the sense of accomplishment you’ll get is priceless. Trust me!

There are three main parts to making granola:

  1. Dry ingredients. These are your oats, nuts, and seeds.
  2. Wet ingredients. Sweeteners, oils. Something that would bind the dry ingredients together.
  3. Spices. Ohh la la. You can go wild here.

We are making Pumpkin Spice Granola so while you could substitute dry and wet ingredients in this recipe with things you love, pumpkin spice is non-negotiable.

This healthy, vegan Pumpkin Spice Granola recipe will make you go crazy! It’s crunchy, flavorful, and is perfect for fall!

Servings: 5 cups (1 serving is 1/3 cup)

Ingredients
Dry
  • 3 cups rolled oats (not instant)
  • 1 cup chopped pecans or almonds
  • 1 cup pumpkin seeds
  • 1 cup sunflower seeds
Wet
  • ½ cup agave
  • ½ cup oil of choice (coconut, olive, grapeseed, avocado)
Spices
  • 4 tbsp pumpkin spice
  • 1 tbsp cinnamon
Instructions
  1. Preheat oven to 300 F.
  2. Mix all dry ingredients and spices. Then mix in wet ingredients. Mix everything well.
  3. Lay out on a baking sheet in a thin layer. Use more than one baking sheet if needed. The layer needs to be thin in order for granola to toast. Do not overload!

  4. Toast in the oven for 30 mins, flipping and mixing halfway.
  5. Serve with yoghurt, plant milk, or as a snack.
