If you’re looking for a quick and easy Energy Bar recipe that doesn’t suck, you’ve come to the right place!

I’ve kept the ingredient list simple with only 5 ingredients:
- Dates
- Walnuts
- Oats
- Protein powder
- Sea salt
They’re great as a:
- Snack on-the-go
- Breakfast
- Post- or pre-workout
- Healthy dessert
6 grams of protein each (plus more if you add more protein powder) and 165 calories – these bars make a perfect snack to keep you full and energized during the day.
Directions are also simple: throw everything into a food processor or high speed blender (I love you Blendtec!) and pulse pulse pulse.
Now, it is important that I mention the dates. I recommend Medjool dates vs. Noor dates. If you don’t know what I’m talking about that is OK – you will know as soon as you start shopping for dates.
Medjool dates have a rich, caramel taste, and a soft chewy texture. Noor dates are firmer and have a delicate sweet flavor. Both are good, it just depends what you want your energy bars to taste like and what you’d like to texture to be.
I prefer Medjool dates in this recipe because they’re chewy. However, if you can’t find Medjool dates at your grocery store, Noors will work as well if you soak them in warm water for about 10 minutes prior to making this recipe.
Once you’ve pulsed your mixture, flatten everything out on a small baking sheet and bake at 350 F / 120 C for 20 minutes. I told you this recipe was different! I decided to bake them instead of leaving them raw. This way they firm up and don’t get mushy in your bag when you take them
Serving suggestion: almond butter! Slather that almond butter all over this bar for some extra yum!

- 1 cup medjool dates
- ½ cup walnuts
- 1/2 cup oats
- 1 tbsp water
- 1/8 tsp sea salt
- 2 scoops protein powder (unsweetened, vanilla, or chocolate)
- Note: feel free to add more protein powder to increase the protein content

Preheat oven to 350F / 120 C.

Bring all ingredients together in a food processor or high-speed blender and blend until well combined. If the mixture is too dry, add 1 tbsp water at a time. If the mixture is too wet, add 1 tbsp of oats a time.

Spread the mixture in a small pan. If you don’t have a very small pan, you can use a larger one just flatten the mixture along one side of the pan.

Bake for 20 minutes. Let cool an cut into squares.

Store in an airtight container in the fridge for up to 2 weeks.
