In this recipe, we will be using whole pomegranate seeds to preserve all of its nutritional benefits. If you’re using a high-speed blender, such as Blendtec, it will all be blended nicely. If you only have pomegranate juice on hand, no worries that would work too.

Quick tip on how to peel and extract the pomegranate seeds without leaving your kitchen look like a murder scene:

1.Slice the pomegranate into quarters.

2.Take a big bowl, put it in the sink, and fill it with water. Then take one sliced piece of pomegranate, place it in the water, and start separating the seeds .

3.The seeds will settle at the bottom of your dish and the rest of the pomegranate flesh will float to the top.

4.Scrape the top with a mesh strainer or your hands to remove all the particles.

5.Drain the water.

I’ve found this method to be the easiest way to extract the seeds and keep my kitchen mess-free.

Ingredients
  • 3/4 cup pomegranate seeds
  • 1/2 cup olive oil
  • 2 tbsp apple cider vinegar
  • 1 tsp maple syrup or agave
Instructions
  1. Combine all ingredients in a food processor or high-speed blender and blend, about 30 seconds to 1 minute, depending on the model of your food processor/blender.

  2. Store in the fridge for up to 2 weeks.

Note: When storing in the fridge, the dressing will separate. Give it a good shake before serving.
