Pomegranate is usually in season from September through February making it a bright and delicious addition to all kinds of winter dishes.

In this recipe, we will be using whole pomegranate seeds to preserve all of its nutritional benefits. If you’re using a high-speed blender, such as Blendtec, it will all be blended nicely. If you only have pomegranate juice on hand, no worries that would work too.
Quick tip on how to peel and extract the pomegranate seeds without leaving your kitchen look like a murder scene:

- 3/4 cup pomegranate seeds
- 1/2 cup olive oil
- 2 tbsp apple cider vinegar
- 1 tsp maple syrup or agave

Combine all ingredients in a food processor or high-speed blender and blend, about 30 seconds to 1 minute, depending on the model of your food processor/blender.

Store in the fridge for up to 2 weeks.
Note: When storing in the fridge, the dressing will separate. Give it a good shake before serving.
