What’s this challenge? We will be cooking a brand-new plant-based recipe every day for the next two weeks together! All recipes are pantry-friendly, easy to make, and will NOT require hard to find ingredients (because grocery shopping ain’t the same anymore!).

Today’s Mystery Recipes are Overnight Oats (Meal Prep style) that you can make in three different ways. I have a unique approach where you make one big batch and then mix various toppings and ingredients to make three different.
Let’s get to it!
Meal prep your breakfast once by making overnight oats in a jar with three different toppings! It’s a healthy, clean, and easy way to make breakfast!
- 3 cups oats
- 1 cup non-dairy milk of choice (oat, almond, soy, etc)
- 1 tbsp chia seeds
- Optional: 1 tbsp nut/seed butter of choice (peanut, sunflower seed, almond, etc)
- 1/2 cup overnight oats
- 1 tbsp chocolate chips
- ½ tsp vanilla extract
- Dash of cinnamon
- A handful of chopped nuts, pecans or walnuts
- Optional: 1 tsp maple syrup or agave
- 1/2 cup overnight oats
- ½ banana, mashed
- 1 tbsp chocolate chips
- 1 tbsp nut/seed butter
- 1/2 banana, sliced (for topping)
- Blueberry Pie
- 1/2 cup overnight oats
- 1 tsp maple syrup or agave
- 1/2 cup blueberries
- A handful of chopped almonds

Mix oats, non-dairy milk of choice, chia seeds, and, if desired, nut/seed butter of choice.

Put in the fridge overnight or at least for 4 hours to set.

Separate the meal prep batch of overnight oats into 3 equal parts. Then mix each part with various flavor ingredients to make three different flavors of overnight oats.
