This Hummus Avocado Raw Veggie Wrap is a quick and easy lunch! It’s packed with nutrients to will keep you full and will give healthy the energy to conquer the world!

Hello, quick lunch idea! These Hummus Avocado Raw Veggie Wraps are perfect if you need a quick and delicious lunch. I love making these when I’m working from home.

This wrap is made up of raw vegetables which means that it is packed with vitamins! It is sure to give you a boost of energy that you won’t even need your afternoon coffee! I mean it.

One of the ingredients in this Hummus Avocado Raw Veggie Wrap is grated carrots which are one of the most nutrient rich root vegetables out there. Carrots are high in beta-carotene which is converted into vitamin A. Why is vitamin A good for ya? Well, it’s critical for your vision. It’s also good for your skin and overall immune system.

Carrots are also high in antioxidants making this wrap a nutritional heaven. Can you tell how much I love this recipe? 😉

To complement the crunchy carrots we’re adding some creamy hummus and avocado. Hummus is also rich in vitamins which mostly comes from tahini that it’s made with. It’s high in Vitamin C and B6. Vitamin B6 supports your brain function and it’s actually one of the ingredients in Red Bull. B vitamins give you energy and I find that eating foods high in these vitamins is simply so much better than drinking a synthetic drink.

Avocado in this recipe adds a delicate, hearty flavor and a smooth texture. #cantstoptalkingaboutavo. Avocados are naturally free from sodium, sugar and cholesterol. They’re high in fat but it’s a healthy monounsaturated fat! Plus it has lots of fiber, packed with Vitamin C, Vitamin B6 and Magnesium.

Quick and delicious plus super nutritious!

Cuisine: American, Raw, Vegan
Servings: 1 large wrap

Ingredients
  • 1 large whole grain wrap
  • 1 tbsp hummus
  • 1/2 avocado, mashed
  • 1/2 cup carrots, grated
  • 1/2 cup cucumber, chopped
  • 1 medium tomato, chopped
  • 1 cup mixed greens, spinach or kale
  • salt and pepper to taste
  • hot sauce, optional
Instructions
  1. Spread hummus all over the wrap. Then spread mashed avocado.
  2. Add mixed greens, carrots, cucumber and tomato.
  3. Add a pinch of sea salt and black pepper.
  4. Add a bit of hot sauce if desired.
  5. Roll into a wrap and cut in half.
