Vegan Grilled Sweet Pepper Sandwich

This Grilled Sweet Pepper Sandwich is one of the quickest and tastiest lunches I’ve ever made! Simple and so delicious!

It’s perfect for when you’re craving something tasty but don’t want to spend an hour in the kitchen and not really in the mood for a cold sandwich.

This Grilled Sweet Pepper Sandwich recipe uses red or yellow bell peppers which I find taste better than green peppers.

Speaking of bell peppers…Do you know the difference between green and sweet peppers? I certainly didn’t know the difference (except for what my taste buds were telling me), so I had to do a little research and here’s what I found:

All bell peppers are considered sweet peppers. The youngest bell peppers are bright green, meaning they aren’t ripe quite yet. Once the green peppers ripen they turn into red peppers. Isn’t that interesting? Green peppers are the least sweet and can be slightly bitter. Whereas the red bell peppers are the sweetest because they’ve been given enough time to fully develop their sweet flavor. Yellow peppers are somewhat in between the ripening timeline. Although some yellow peppers varieties remain yellow throughout.

To make this Grilled Sweet Pepper Sandwich you’ll need to sauté or grill red or yellow bell peppers and that is the only cooking being done! Honestly, if you’re feeling lazy, you can also have them raw!

Grilling sweet peppers reveals their buttery texture and rich sweet flavor. Paired between two toasted pieces of sandwich bread, they make a delicious meal! To make this sandwich even more satisfying, we’re going to add ripe avocado to make it even more buttery. And add some hummus to get to the next level of creaminess.

Quick and tasty sandwich with grilled veggies!
Course: Main Course
Cuisine: American, Gluten-Free, Vegan
Servings: 2 sandwiches

Ingredients
  • 1 large sweet yellow or red pepper chopped into long strips
  • 1/2 Spanish onion chopped lengthwise
  • 1/2 tomato sliced
  • 4 slices of cucumber
  • handful of lettuce or spinach
  • 1/2 avocado mashed
  • 1 tbsp hummus
  • 4 slices of gluten-free bread or bread of choice
Instructions
  1. Grill peppers, onions, tomato and cucumber slices over medium heat. You can grill all veggies in one large pan.*
  2. Spread mashed avocado and hummus onto 2 slices of bread and add grilled vegetables. Add salt and pepper to taste

*I find that grilling peppers with a closed lid expedites the cooking process.
