Are you looking for a delicious gluten-free breakfast? You’ve come to the right place!

Ever since getting a waffle maker for Christmas last year, I’ve been obsessed with making waffles for breakfast on the weekends. It’s just something I don’t normally get to have Mon – Fri, plus it reminds me of my childhood.

This gluten-free vegan waffle recipe is very simple and only has six ingredients. I used Bob’s Red Mill Gluten-Free flour blend in this recipe. But any GF flour would work.

We’ll be making Chocolate Chip waffles so one thing that is a must in this recipe is vegan chocolate chips. My favorite brand is Enjoy Life Mini Chocolate Chips that are also gluten-free. These choco chips taste so amazing. I could just eat them all day long!

Since we’re adding choco chips in our gluten-free vegan waffle batter, we won’t be adding any extra sugar. I find that choco chips are sweet enough. If you’re eating these waffles with syrup, then you’ll get that extra sweetness anyway.

The texture of the batter will not be runny. It’s on a thicker side and that’s ok. GF flour has a slightly different texture compared to regular flour. Also, our recipe has nut milk instead of water which makes the batter a bit thicker.

Don’t be afraid though! The waffles will be crispy on the outside and fluffy on the inside. Promise!

Another thing I wanted to mention is your waffle iron temperature. I have a non-stick iron which is about one year old. My waffle iron isn’t the greatest so even though it’s non-stick I have to spray it with a little bit of oil to prevent from sticking.

I also only cook my waffles for 3 minutes otherwise they will be burnt. Depending on the type of the waffle iron you have, adjust the cooking time.  I find that 3 minutes is a good average time that works for various waffle irons.

Ingredients
  • 3/4 cup gluten-free flour
  • 2 tsp baking soda
  • 1/2 tsp vanilla
  • 1/3 cup dairy-free nut milk (almond, cashew)
  • 1 tbsp olive oil/coconut oil/oil of choice
  • 1/4 cup vegan chocolate chips
Instructions
  1. Combine all ingredients, except for the chocolate chips, and whisk to combine.
  2. Gently fold in chocolate chips and mix with a spatula.
  3. Pour mixture into a waffle maker and cook for 3 minutes.
  4. Note: To make one large waffle pour the entire mixture in the waffle maker at once. Alternatively, pour half of the mixture at a time to make two medium waffles.
  5. Top with more agave or maple syrup, if desired.

    What kind of nut milk are you using? Would plain unsweetened almond milk work?

      Yes! I always use plain unsweetened almond milk and I find it works the best!

    I don’t know if it’s because I used brown rice flour or what but there was nothing to bind these so they just crumbled and fell apart in my waffle maker. Dreadful taste as well. 🙁

      Hi Dayna, so sorry to hear they didn’t turn out well. I used Bob’s Red Mill GF flour in this recipe which is more of a blend of various GF flours. I’ll specify that in the recipe now so it’s more clear. I’ve never cooked with brown rice flour so can’t be of much help here! I’ll play around with brown rice flour this month and see if I can come up with a waffle recipe that works. I’ll report back here in a few weeks 🙂
