Gluten-free waffles are tricky. I’ve experimented many times and 99% of the time my waffles are failures. Many gf waffle recipes require eggs or egg whites. Since we don’t eat those, it’s tricky to find a binding ingredient that will hold the waffle in place.
The key binding ingredient in this recipe is baking powder. Not to be confused with baking soda! The golden ratio in the gluten-free baking is to use 2 tsp of baking powder for every cup of gluten-free flour. We’ll be using 1/2 cup flour to make one waffle, so we will only need to add 1 tsp of baking powder.
P.S. If you’re allergic to gluten, make sure the baking powder is also gluten-free, not all are. If you’re just eating gf for fun like me then no worries.
For the flour, I like to use Bob’s Red Mill all-purpose gluten-free flour. It’s reliable and works every time.
I love using coconut sugar in breakfast recipes. We will be adding 2 tsp of that. We don’t need much sugar in this recipe since berries are naturally sweet.
If you are avoiding sugar then you can omit the coconut sugar, just make sure to add more berries when you’re eating the waffle to improve the taste. Omitting sugar won’t totally bomb this recipe but it will definitely affect the taste a little. You can experiment and see what you like better.
For berries, I used a mix of frozen strawberries, blueberries, blackberries, and raspberries. You can also use fresh ones, I just used whatever I had on hand at the time. Don’t forget to reserve some as a topping when serving.

- 1/2 cup Gluten-Free Flour
- 2 tsp coconut sugar or brown sugar
- 1 tsp baking powder
- ½ tsp vanilla extract
- 1/2 unsweetened almond milk or any nut milk of choice
- 1 tbsp coconut oil or oil of choice
- 1/4 cup fresh or frozen berries (any mix of strawberries, blueberries, raspberries, blackberries) + a little more for topping

Whisk ingredients except for berries until well combined. Gently stir in berries.

Pour the mixture into the waffle iron and cook for 3 minutes. Adjust time based on the brand of your waffle iron, mine usually takes 3 minutes.

Serve with maple syrup, agave nectar, or dairy-free yoghurt.
