Are you ready for one of the best vegan pancakes recipes ever? I LOVE having pancakes for breakfast. In fact, I have so many recipes like Chocolate Chip Pancakes, Healthy Gingerbread Pancakes, and Fluffy and Moist Vegan Pancakes.
What’s this challenge? We will be cooking a brand-new plant-based recipe every day for the next two weeks together! All recipes are pantry-friendly, easy to make, and will NOT require hard to find ingredients (because grocery shopping ain’t the same anymore!).

Today’s recipe is the BEST basic recipe for vegan pancakes that you can endlessly customize!

Substitution Options
- Whole wheat flour -> White flour/Gluten-free flour
- White sugar -> Brown sugar/Coconut sugar/Maple syrup/Agave
- Cinnamon -> Leave out or use any other spice such as pumpkin spice, nutmeg, ginger, or allspice. You can also add cocoa powder for chocolate pancakes.
- Coconut oil -> Olive oil or any other oil of choice
Add-Ons
- Sliced bananas
- Frozen or fresh berries (e.g. blueberries, strawberries, blackberries)
- Sliced apples
- Chocolate chips
- Coconut chips
- Nuts (walnuts, slivered almonds, etc.)
- Raisins
- Dried cranberry
- Vegan protein powder for extra protein
- Cocoa powder

- 1/2 cup flour (whole-wheat or white)
- ½ tsp baking powder
- 1/2 tsp cinnamon
- 1 tbsp sugar (white, brown, coconut, maple syrup, or agave)
- 1/8 tsp salt
- 1/2 cup dairy-free milk
- 1 tbsp coconut oil, melted
- ½ tsp vanilla extract
- Optional toppings: chocolate chips, berries, bananas

Mix all ingredients in a bowl using a whisk.

Heat a non-stick pan and pour ½ of batter. If you are using toppings, add them to the batter now. Cook for 3-4 minutes on each side.

Serve with more toppings, vegan yogurt, or maple syrup or agave.
