Who else loves making pancakes on the weekend? Many of you told me you make pancakes on the weekends and I am just the same way! After having overnight oats or chia puddings during the week, I’m ready for something special for the weekend!

Why do we love pancakes so much? Maybe because they remind us of our childhood. Or, maybe seeing that fluffy stack drizzled with sweet syrup makes us dance on the inside?

So, if you’re in the mood for some special weekend treat a.k.a. pancakes, you will love this Fluffy and Moist Vegan Pancakes recipe.

Now, there are many ways to make vegan pancakes. This particular recipe is designed for the fluffy and moist texture. It’s a bit different from the traditional recipes because it’s made by mixing spelt flour and coconut flour.

Are you familiar with spelt? While it may sound unfamiliar, spelt flour has been around for centuries. If you aren’t a baker like me then it must be relatively new to you as well.

Spelt has the same genus as wheat but it’s a different species from wheat. Spelt does contain gluten. It’s gluten structure is a bit different from wheat that’s why it isn’t always a one to one substitute. But since pancakes aren’t technically a baked good, we don’t have to worry about the exact substitution measurements.

I like spelt because it adds a mild nutty flavor and in pancakes it is simply amazing.

We will also be using coconut flour in this Fluffy and Moist Vegan Pancakes recipe which I love because it is so high in fiber! It is also low in sugar and has a low glycemic index. Coconut flour isn’t really a “flour” in the traditional sense. It is made by simply grinding dried coconut meat (i.e. the inside of a coconut).

I’ve been using coconut flour in the past year in different recipes and find it to be very “water hungry”. It absorbs moisture like crazy! So, your batter will always be thicker and dense when using coconut flour. However, be careful not to add to much water to thin out the batter because then your creation simply won’t hold together!

Fluffy and Moist Vegan Pancakes

Moist and fluffy vegan pancakes that will make your day amazing!

Course: Breakfast
Cuisine: Vegan

Ingredients
  • 1/4 cup spelt flour
  • 1/4 cup coconut flour
  • 1 ripe banana mashed
  • 1 tsp coconut sugar
  • 1 tsp baking powder
  • 1 tsp vanilla powder
  • 1/2 tsp coconut oil
  • pinch of sea salt
  • 1/2 cup unsweetened nut milk
Instructions
  1. Mix all the ingredients together in one bowl.

  2. Heat up one large pan on medium heat and pour ¼ cup of batter to make one pancake. I suggest using a large pan to cook pancakes all at once to save time. 

  3. Optional: serve with almond butter and agave or maple syrup.
