Our recipe today is super easy Vegan Potato Latkes. It’s a perfect recipe if you have a bunch of potatoes at home and don’t feel like making yet another pot of mashed potatoes.

Simple, crispy latke recipe that can also be made gluten-free! It’s perfect as an appetizer, snack, or a side vegetable.
- 2 cups grated potatoes (about 4 medium Russet potatoes)
- 1 tbsp cornstarch
- 1/3 cup all-purpose flour (can sub for gluten-free flour)64
- ½ tsp baking powder
- 1 tsp salt
- 1/8 tsp pepper
- 1-2 tbsp olive oil for pan frying

Peel and wash potatoes. Grate them using a handheld grater or mandolin.

Squeeze as much moisture as you can from grated potatoes using a kitchen towel, paper towel, or cheese cloth. Transfer grated potatoes back into a bowl.

Add remaining ingredients and stir well. Start forming patties with your hands by using 2 tbsp of mixture.

Heat oil in a nonstick pan over medium heat. Pan fry latke patties for about 5 minutes on each side, until fully cooked.
