This Curried Thai Peanut Sauce comes together in about 10 minutes and requires 10 ingredients.
If you’ve made Thai Peanut Sauce before – this one is different. You will have to cook it! Cooking will only take 5 minutes and it will make the sauce rich and creamy. Cooking also binds the ingredients together creating a depth of flavor.
What can you eat with this Curried Thai Peanut Sauce? Here are some ideas:
-Noodle Bowl
-Vegetable Stir Fry
-As a salad dressing
-As a dipping sauce (try it instead of ketchup with fries!)
Some of the ingredients that I’d like to highlight in this recipe are jalapeno and curry powder. Jalapeno gives our sauce a little bit of heat. Don’t forget to remove the seeds, unless you like it extra hot!
Curry powder (even though mostly used in Indian cooking) adds complex flavor and goes very well with peanut butter.
This Curried Thai Peanut Sauce is luscious, smooth (but not too smooth), and tasty! I say it isn’t too smooth because we won’t be blending it in a food processor. I love the slightly chunky consistency from chopped jalapeno and grated ginger. It adds a great texture and compliments noodles and when served as a dipping sauce.

Easy 10-minute Thai Peanut Sauce recipe that is perfect for spring rolls and noodles!
- 1 tbsp olive oil
- 1 jalapeno pepper, seeds removed and minced
- 3 garlic cloves, minced
- 1 tbsp fresh grated ginger
- 1 1/2 tsp curry powder
- 1/2 cup water
- 1/3 cup creamy peanut butter
- 2 tbsp soy sauce
- 3 tbsp rice vinegar
- 1 tbsp coconut sugar or brown sugar
- 1 tsp peanuts, chopped fine

Heat oil in a small pot over medium heat. Add jalapeno, garlic, ginger, and curry powder and cook for 30 seconds, stirring continuously.

Add water, peanut butter, soy sauce, vinegar, and sugar. Mix with a whisk until well combined. Cook, stirring continuously, until the mixture becomes creamy. Add more water, 1 tbsp at a time, as needed to adjust consistency.

Top with chopped peanuts when serving.

Store in a glass jar in the fridge for up to 5 days.
