I’ve been on a breakfast cookie kick lately. What’s not to love? Breakfast cookies are healthy, taste like dessert, and super quick to make. Plus, one batch makes approximately eight cookies which means I don’t have to worry about making breakfast for a couple of days!
Quite honestly, when I first made breakfast cookies I didn’t even know it was a thing. My very first cookies were PB&J Breakfast Cookies.
I woke up one Saturday and felt bad for my bananas – there were so brown and wilted – I wanted to save them! I wasn’t in the mood to make banana bread,
So, I thought if I mash bananas, add oats, nut butter, and then bake them they could turn into cookies. It’s like a baked oatmeal but in the form of cookies, right?
They were such a success with me that I now make a new breakfast cookie recipe every week.
Breakfast cookies are also great snacks. Ran out of granola bars or energy bites? Not to worry, breakfast cookies are basically the same thing.
I’ve taken them on car rides, eaten them at the office as a mid-day snack, had them as dessert during a weekend Netflix session. You get the idea, you can pretty much eat them for any occasion 😉
Today’s recipe is Chocolate Pecan & Cranberry Breakfast Cookies – to represent the holiday spirit. I can already imagine these cookies being a hit for Xmas morning. #nomnom
We will be using unsweetened raw cacao powder for chocolate flavor. Raw cacao powder is simply the best. It’s so rich, tastes like chocolate, and has no sugar!
Then we will be adding dried cranberries to sweeten up our breakfast cookies. And this will be our only sweetener.
To finish off, we will be adding pecans for some crunch.

Healthy breakfast cookies recipe made with oats, cocoa powder, pecan, and cranberries. They’re easy to make and make a great breakfast and snack!
- 2 ripe bananas
- 2 cups oats (not instant)
- 1 tsp baking powder
- 1/2 tsp -baking soda
- 1/2 cup almond butter
- 2 tbsp cocoa powder
- 1/4 cup cup dried cranberries
- 1/4 cup pecans
- pinch of salt

Preheat oven to 375 F / 200 C.

In a medium bowl, mash ripe bananas with a fork.

Add the rest of the ingredients and mix with a fork until well combined.

Scoop ¼ cup of mixture and start forming cookies with your hands. Place on a cookie sheet.

Bake for 15 minutes. The cookies will be a little soft when they come out of the oven. They will harden as they cool.
