You are the love of my life. I don’t think I’ve ever told you that in person and it’s time to say it straight.
I’ve had strong feelings for you for a while. On the days I don’t see you, I can’t stop thinking about you. When will I see you again?
I’ll admit, sometimes, it is my fault for not seeing you for a while. Sometimes, I forget to put you on my grocery list. Other times, I don’t have the energy to make you from scratch.
This doesn’t mean you aren’t special and that I don’t think about you.
There has not been anyone in my life as special as you. I want to have you for breakfast, lunch and dinner. I think we can make each other very happy.

Okay, since we’ve gotten that out of the way 😉…let’s talk more about this Chickpea Salad Sandwich. This is one of the most delicious lunches I’ve made. It doesn’t take much time and tastes absolutely delicious.
Even your non-vegan household members will love it.
One of the best parts is that you can customize this recipe to your liking. Add a little more spice. Put different toppings on your sandwich. Use a different bread. Spice it up with sriracha or add some avocado dressing.
Possibilities are endless.

Looking for a quick and satisfying lunch? This creamy and savory Chickpea Salad Sandwich is the answer to your lunch cravings! Easily customizable too – make it GF, spice it up, add w.e. toppings you crave.
- 1/2 can chickpeas
- 1 tbsp nutritional yeast
- 1/2 tsp smoked paprika
- salt and pepper to taste
- 2 tbsp vegan mayonnaise
- 1/4 avocado
- 2 slices of preferred bread GF, Ezekiel, whole grain, whole wheat, etc.

Mash chickpeas with a fork in a small bowl. Leave the mix slightly chunky.

Add mayonnaise, nutritional yeast, smoked paprika, salt and pepper to taste. Mix everything.

Mash ¼ avocado and mix in.

Spread the Chickpea Salad on top of the toasted bread and top with fresh spinach and purple cabbage. Customize toppings to your liking.
