Ready to make a delicious yet healthy dessert! This is by far one of my favorite dessert creations on this blog!

Last time I used chickpeas was in this Chickpea Pumpkin Brownie recipe and lemme tell ya, chickpeas are somehow magically delicious in dessert recipes!

First and foremost, this Chickpea Cookie Dough is healthy, low calorie, high in protein, you can make it nut-free, roll it into balls and cover with chocolate, eat it with a spoon, or serve as a dip. So many options!

Prep Steps

Steps are so easy! Blend all ingredients, except for chocolate chips, in a food processor for at least 60 seconds, then gently add in chocolate chips. That is all you need to do!

Make sure to taste it and add more chocolate chips or sugar, if desired.

Which Sugar to Use?

I’ve made this recipe using both granulated sugars and liquid sugars and the results were great every time. You can use white table sugar, light brown, or dark brown sugar.

Alternatively, you can use either maple syrup or agave in place of granulated sugar. Just make sure to use half the amount of regular sugar when using liquid sugar. Note: when using liquid sugar your batter may be a bit sticky. If that’s the case, add 1-2 tablespoons of oat or almond flour.

Does Chickpea Cookie Dough Taste Good?

Oh yeah, it does! Because we’re adding some sugar, vanilla, and nut/seed butter, the taste of chickpeas is indistinguishable.

Keep in mind that we are not using butter and putting a healthy twist on this dessert without sacrificing taste. This Vegan Chickpea Cookie Dough resembles the real thing in both texture and taste.

Can I Make It Nut-Free?

Absolutely! You can use seed butter such as sunflower or pumpkin seed butter. The nut or seed butter serves as a binding ingredient and will make your cookie dough creamy.

Ingredients
  • 1 1/2 cups cooked chickpeas
  • 1/8 tsp salt
  • 1/8 tsp baking soda
  • 2 tsp pure vanilla extract
  • 1/4 cup nut/seed butter of choice
  • 1/3 cup chocolate chips
  • 2-3 tbsp oats flour or almond flour
  • 1/4 cup brown sugar (can sub for 1/8 cup maple syrup of agave – adjust sugar as necessary)
  • Optional: oat, almond, or coconut flour
Instructions
  1. Combine all ingredients except for the chocolate chips in a food processor. Process until the mixture is very smooth.
  2. Taste and adjust sugar as necessary.

Note: If you are using maple syrup or agave, the batter may come out a bit sticky. If that’s the case, add 1-2 tbsp of oat, almond, or coconut flour.

    Can you bake this then into cookies or is it just to eat like raw cookie dough?

      It’s meant to be eaten raw just like raw cookie dough! I haven’t tried baking this batter yet so not sure how it will hold up, but adding it to my recipe testing list 🙂
