These Cauliflower Tacos are perfectly crispy and subtly smoky. Chipotle Aioli adds a little spice kick that is just enough to make you happy but not too spicy to make you cry!
In the mood for some Mexican? There is really no need to order out when you can make these Cauliflower Tacos with Chipotle Aioli in about 30 mins – and most of the cooking time is hands off as cauliflower is roasting in the oven!
Mexican cuisine is so flavorful and so versatile! It often includes complex flavors in one dish to combine savory, sour, sweet and salty (and can be spicy!).
Mexican is also my go-to when I have guests over. There is always something for everyone in the this cuisine: chips and salsa or quac, Mexican rice, burritos, bowls, tacos, enchiladas and the list goes on!
These Mexican-inspired Cauliflower Tacos with Chipotle Aioli are an easy meal to make that incorporate all the complex Mexican flavors but doesn’t take a lot of time to prepare. I also think they make the perfect left-overs (bonus!). Just pop things into a taco shell, add some healthy sauce and you’re ready to conquer the world!
These Cauliflower Tacos with Chipotle Aioli use roasted cauliflower which is the easiest ways to make cauliflower and I believe is one of the yummiest! Roasting cauliflower add a little nutty flavor and a crispy texture. Cauliflower has a very mild taste and is almost like a sponge in terms of function – it’ll just absorb any seasoning and sauces you add to it!
Since, we are making Mexican cauli, I’ve included the favorite ingredient in town in aioli – chipotle in adobe sauce. That smoky flavor gets me every time. #obsessed
Chipotle in adobo sauce is very flavorful and includes various spices that enhance the flavor of the peppers such as paprika, oregano and garlic. Be careful though, these friendly looking peppers are spicy! You only need one to two peppers to make a decent batch of sauce. Unless you prefer things super spicy.

- 2 cups chopped cauliflower
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp sea salt
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- chopped lettuce or mixed greens
- 4 gluten-free tortilla shells
- 1/2 cup vegan mayonnaise
- chipotle in adobo sauce: 1 small pepper + 2 tsp of sauce
- 1 tsp lemon juice
- 1 tsp maple syrup or agave

Preheat oven to 400 degrees.

Toss cauliflower with oil and spices in a bowl and bake for 20-25 mins until brown and tender.

To make chipotle aioli, combine all ingredients in the food processor and blend for a few seconds until peppers are pureed and all ingredients are well combined.

To make tacos, spread chipotle aioli on the tortilla shell, add fresh lettuce and top with cauliflower.
