Or sometime Pancakes 😉
Making waffles for breakfast on the weekends feels like a celebration of freedom. It’s a special treat you’ve been waiting for all week.
My weekend ritual goes something like this:
Sleep in. Make a cup of coffee and sip it slowly while chilling on the couch I haven’t sat on the whole week. Then slowly proceed to the kitchen to make waffles from scratch in 10 minutes. Devour waffles with sweet agave. Drink more coffee. Then ponder if I want to go over my finances or go back to bed.
Even if I decide to go through my finances or organize my mail, the fact that I’ve had waffles makes the whole day better. #obsessed
I try making different waffle flavors every now and then but currently, my favorite is blueberries. I feel like blueberries are the best fruit for waffles and pancakes. Do you also feel the same way?
Blueberries add moisture and natural sugar. Therefore, these Blueberry Waffles do not have any added sugar. There’s simply no need.
For the flour, we’ll be using spelt. I use spelt quite a lot in pancake and waffle batters. If you aren’t familiar with it, spelt flour is a whole-grain, non-wheat flour. It has a lighted texture and works well as a substitute for all-purpose flour.
These Blueberry Waffles are by far the best waffles I’ve made. They are crispy on the outside and moist on the inside. The spelt four adds a little nutty flavor and the blueberries add natural sweetness. Healthy and very filling breakfast that makes you feel good.

- ½ cup spelt flour
- 2 tsp baking powder
- 1/8 tsp sea salt
- ½ cup blueberries, frozen or fresh
- ½ lemon, juice and zest
- ¼ tsp vanilla extract
- 1 tsbp coconut oil
- 1/3 cup water

Combine all dry ingredients in a bowl. Then mix in wet ingredients. Whisk well to combine.

Pour mixture into a waffle maker and cook for 3 minutes.

Note: To make one large waffle pour the entire mixture in the waffle maker at once. Alternatively, pour half of the mixture at a time to make two medium waffles.

Top with more blueberries and agave syrup, if desired.
