Vegan Almond Espresso Pancakes are such a delicious breakfast to give you energy! These pancakes are moist and very satisfying!
If you love coffee and would like to try to eat your coffee instead of drinking it then this recipe is for you! These pancakes are flavored with espresso for that extra morning kick.

I have never been a coffee drinker until a few years ago. Black unsweetened tea woke me up every morning. I was also drinking it more out of a habit. It was more like a ritual that would signify that after I’m done drinking tea, it’s time to get out and conquer the world!
A few years back, my husband and I moved. We moved further away from where we currently work. With that, my commute changed. I would get up in the morning, work-out, drink my tea and rush out of the door full of energy. And then….
I would take a warm and plushy bus to work. Okay, the bus isn’t all that comfy but compared to NYC plastic subway seats, this bus was heaven! Plus I got my own seat – that never happens during the rush hour in the city!
So, the bus ride lulled me back to sleep every morning. After I got to NYC, I’d still have to take the subway for a few stops. Can you image being asleep peacefully for 30 minutes and then get dropped off at a madhouse we call a subway?
That is when everything changed. I needed coffee!
Now, I actually do like a good black cup of coffee. Right my favorite is cold brew. I even heat it up if I feel like having a warm cup vs. iced. Haha!
I made this espresso pancake recipe one morning and fell in love. The almond butter in the batter complements the espresso very well and adds smoothness just like a good cup of cappuccino…yum!

Easy to make vegan Almond Espresso Pancakes that are perfect for coffee lovers!
- ½ cup spelt flour
- 1 ripe banana mashed
- 1 tbsp almond butter
- 1 tsp instant coffee powder
- 1 tsp baking powder
- 1 tsp coconut sugar
- 1 tsp vanilla powder
- pinch of sea salt
- ¼ cup nut milk unsweetened

Mix all the ingredients together in one bowl.

Heat up one large pan on medium heat and pour ¼ cup of batter to make one pancake. I suggest using a large pan to cook pancakes all at once to save time.

Optional: serve with almond butter and agave or maple syrup.
