You can pretty much make fries out of anything! Right?
Every time I make fries I use sweet potatoes which I always have on hand. It feels like sweet potatoes have taken over.
Then one Sunday I wanted to try something new. Could I use another vegetable to make fries?
I thought why not go for Eggplant Fries! To be honest, I wasn’t exactly sure how they were going to turn out. Would they be mushy? Usually, when eggplant is baked, whole or sliced, it comes out soft. The same goes for grilling. The question was – how to make them crispy?
To do this we will need to use the “crispify” technique. First, dip the eggplant strips into a flour mix. Then dip them in a flax egg to add some moisture. Lastly, dip them in breadcrumb mix.
This technique will make your Eggplant Fries so CRISPY! Yesssss!
If you’re a fan of eggplants, you will absolutely love this recipe. It takes a different twist on an eggplant, which is so exciting!
As you first bite in, you will taste the meaty texture of the eggplant. It is perfectly balanced with the crispy outer layer. The finishing notes are subtly smoky, created by smoked paprika that we’ll be using as our secret ingredient in this recipe.
So, what are some occasions suitable to make these Eggplant Fries?
- One: Excellent party finger food, especially when paired with Vegan Tzatziki Sauce.
- Two: Appetizer for a dinner night in.
- Three: Lunch prep for the week. These babies make excellent left-overs and do not get soggy.
- Four: Side dish for a Greek themed meal.
- Five: Just cause…
I decided to made them as an appetizer one day. Had them as a side dish on the second day. On the third day, I added them to my salad for lunch. Triple duty 😉

Crispy Artisanal Eggplant Fries that guarantee a perfect bite! Delicious savory herbs carefully coat each fry that are baked to perfection!
- 1 large eggplant
- Wet Mix: 2 tbsp ground flax seeds + ¼ cup water
- Flour Mix: 1 cup gluten-free flour + ½ tsp salt + ¼ tsp pepper
- Breadcrumbs Mix: 1 cup gluten-free breadcrumbs + 3 tbsp nutritional yeast + 1 tsp oregano + 1 tsp smoked paprika

Preheat oven to 425F.

Peel the skin off the eggplant and cut it into long “french fry” strips.

Dip into the flour mix, then then wet mix, then the breadcrumbs mix.

Place eggplant fries on the baking sheet and bake for 25 mins.

Serve with ketchup or vegan tzadziki sauce.
