Creamy and crunchy Pistachio Pesto recipe that’s ready in 10 minutes! It’s great to use in pasta, salads, or as an appetizer!
Pesto is one of the easiest sauces you can make if you’re looking to prep a quick meal. Its creamy and crunchy consistency along with deep flavor can elevate an otherwise dull dish.
I’ve made pesto before with almonds and hemp seeds (both of which are super delish by the way!) and fell in love with trying various nuts and seeds as a base for the pesto. In today’s recipe, we will use Pistachios as our star ingredient.
Pistachios make a great base for pesto. They have an earthy flavor which complements the strong fresh flavor of basil in pesto.
The main ingredients in our recipe are pistachios, extra-virgin olive oil, a clove of fresh garlic, fresh basil, and a little bit of salt and pepper. This very simple list of ingredients, when combined, delivers maximum flavor.
I highly recommend using a high-speed blender if you have one. If not, the food processor would do as well. Just throw all of the ingredients in and blend. I use a “dressing/sauce” setting on my Blendtec for this, it’s roughly 25 seconds of continuous blending.
You want the basil to be completely blended into the oil. The garlic should be fully blended in as well (no chunks). Pistachios should come out chopped up very small but not to the point where they’ve been turned into a powder – we want to keep that decadent crunch!
This recipe makes about 10 tablespoons. Store in a glass jar in the fridge and use it in pasta, salads as a dressing, or as a dipping sauce for an appetizer. You can’t really go wrong this one!

- 1/4 cup peeled pistachios roasted or unroasted
- 1 garlic clove
- 1 1/2 cup fresh basil
- 1/2 cup extra virgin olive oil
- 1/4 tsp salt adjust to taste
- Pinch of pepper adjust to taste

Mix all ingredients in a food processor or a blender and blend until everything is well mixed and creamy.
