Step 1: Cut up tofu into small squares.
Step 2: Toss it in coconut flakes in a large bowl to coat evenly.
Step 3: Bake it.

- 1 block extra-firm tofu
- 1 cup unsweetened coconut flakes

Instructions:

Heat oven to 375 F / 200 C.

Cut tofu into small squares. There is no need to squeeze the water.

In a large bowl combine coconut flakes and tofu. Toss tofu to coat it with coconut flakes.

Place tofu on a baking sheet and bake for 25 minutes.

Serving suggestions: over rice, in a salad, in a sandwich.
