Ingredients
Chickpea Patties
  • 1 16-ounce can chickpeas, approx. 1.5 cups
  • 1/2 onion, chopped
  • 2 garlic cloves, minced
  • 1 medium carrot, grated
  • 1/2 cup cilantro, chopped
  • 1 tbsp olive oil, or oil of choice
  • 1/3 cup oat flour or quick 1-minute oats
  • 1 tbsp paprika
  • 2 tbsp stoneground mustard
  • 1 tsp sea salt
  • 1/8 tsp black pepper
Garnish
  • burger buns of choice or lettuce wrap
  • 1/4 red onion, sliced
  • 2 tbsp pickles
  • 1 to tomato, sliced
Instructions
  1. Preheat oven to 400 F / 200 Line a baking sheet with foil.
  2. Drain chickpeas and reserve some of the chickpea water. Mash chickpeas in a bowl with a fork.
  3. Add the rest of vegetables, oil, oat flour, and seasoning. Stir well with a spatula. If your chickpea mixture is too wet, add more oat flour, 1 tbsp at a time. If the mixture is too dry, add 1 tbsp of water a time.
  4. To make patties, take 1/4 measuring cup to scoop out the mixture and drop it onto a baking sheet. Press the patty to flatten it. Repeat until all mixture is gone.
  5. Bake in the oven for 25-30 minutes. There’s no need to flip the patties.
  6. Let patties cool for 5 minutes and then remove them with a spatula.
  7. Store in an air-tight container in the fridge for up 5 days.
