Such an easy, vegan alternative to traditional mashed potatoes. This Roasted Garlic Cauliflower Mash is creamy, flavorful, and low-carb making it a perfect healthy side dish!

Ingredients
  • 1 medium cauliflower head
  • 2 cloves garlic
  • 1.5 tbsp nutritional yeast
  • 1 tsp oregano
  • ΒΌ tsp salt
  • 1/8 tsp pepper
  • 3 tbsp plant milk
Instructions
  1. Steam cauliflower florets until soft, about 15 minutes. Let cool for 5 minutes. 

  2. While cauliflower is steaming, caramelize garlic. Heat a small non-stick pan over medium heat. Chop garlic and cook in a pan for 1 minute, stirring continuously. If the garlic is sticking to the pan, add 1 tsp of water. Set aside. 

  3. In a high-speed blender or food processor, combine steamed cauliflower, roasted garlic, and the rest of the ingredients. Blend until well combined. If the mixture is a bit dry, add additional tbsp of plant milk.
