Hello, lovely pancakes! There’s really no wrong time of the year to have’em. Summa, winter, fall or spring – pancakes are always everyone’s favorite!
I’ve made several vegan pancakes before like the classic Fluffy and Moist Vegan Pancakes and Healthy Gingerbread Pancakes. All so good 😊 This time I thought to make pancakes out of Whole Wheat Flour!
I like whole wheat flour for several reasons. First, it’s higher in nutrients and fiber than the plain old white flour. It also has more iron, calcium, and protein. We’re all for stuff with jammed packed nutrition, right?
Steps to make these pancakes are super duper easy. Takes only 5 minutes to prep + 5 minutes to cook. First, mash the banana. Use a very ripe banana – it’ll mash easier and will have a sweeter taste. P.S. Whenever I see my bananas are starting to go bad, I make this recipe!
Mix all the dry ingredients, then whisk in the wet ingredients. I used unsweetened vanilla almond milk. Soy or oat milk will work just as good.
Then, gently mix in vegan chocolate chips. I like to use Enjoy Life brand that’s available in the U.S.
Scoop 1/4 cup batter at a time and cook on a non-stick pan over medium heat until you see bubbles forming the surface. When it’s all bubbly – it’s time to flip! All in all, cooking should take about 5 minutes.
I like to serve these pancakes with agave. I use agave instead of the sugary pancake syrup. Agave has a lower glycemic index and just makes me feel like I’m eating healthy, ya know?! 😉
This recipe makes a total of five medium-sized pancakes. I can easily down them in one sitting. So, if you’re making them for more than just yourself, then double the recipe. Doubling will increase the cooking time a bit. Use two (or even three!) pans at once to keep the cooking time to 5 minutes. #smartcooks

- 1 ripe banana mashed
- 1/2 cup whole wheat flour
- 1 tsp baking soda
- Pinch of salt
- 1/2 cup nut milk
- 1 tbsp coconut oil
- 1/2 tsp vanilla extract
- 1/4 cup chocolate chips (I used Enjoy Life Vegan Chocolate Chips)

Instructions:

Mix all dry ingredients. Then whisk in all the wet ingredients. Whisk everything together until well combined. Gently mix in chocolate chips.

Heat a non-stick pan over medium heat. Make sure the pan is very hot before you start cooking.

Spray the pan with a little bit of oil and pour 1/4 cup of batter for each pancake. Once you see bubbles forming on the service, it’s time to flip!

Serve with sweet syrup of choice such as agave or maple syrup.
