How to Clean Shiitake Mushrooms

STEP ONE: rinse Shiitake mushrooms under cold water to get rid of any dirt.

Shiitakes absorb a lot of moisture and you will notice they’ve absorbed some of the water after you rinse them.

Give mushrooms a little shake or lightly pat them dry with a paper towel. They do not have to be completely dry before cooking.

STEP TWO: cut off the stems and either discard them or save them in a freezer bag to make vegetable stock later.

While the stems do not have the best texture to be edible, they’re still packed with flavor.

STEP THREE: cut each mushroom cap into strips.

How to Cook Shiitake Mushrooms

I must be honest, finding the right balance of ingredients, took a little bit of trial and error!

My first instinct was to cook Shiitakes with olive oil + salt + pepper. That did not work. The mushrooms came out okay, but not great.

Shiitake + Soy Sauce + Sesame Oil

Since Shiitake mushroom is native to East Asia and is used widely in Asian cooking, I thought to add a little soy sauce along with olive oil.

Oh, my! What a difference did that make!

The mushrooms immediately soaked up all the flavor of soy sauce and turned into deliciously seasoned goodness.

    Add Soy Sauce

Then one day, I ran out of olive oil. My husband started looking in the pantry to see if we had another kind of oil at home.

He found a half-used bottle of sesame oil in our pantry and decided to use it.

Second wow!

This took Shiitakes to the next level. Sesame oil adds a ‘toasted’ nutty flavor which balances perfectly with salty soy sauce.

The combination of sesame oil and soy sauce is truly a match made in heaven for making Shiitake mushrooms!

Ingredients
  • 1 cup Shiitake mushrooms, cut lengthwise into strips
  • 1 tbsp sesame oil
  • 2 tbsp soy sauce
Instructions
  1. Preheat non-stick skillet on a medium heat.
  2. Add shiitake mushrooms, sesame oil, and soy sauce.
  3. Sauté for about 3 minutes, until mushrooms are soft. Shiitake mushrooms cook quickly.
  4. Optional: serve over buckwheat soba noodles and fresh arugula (as shown in the video).

    This was excellent!! I found I had quite a bit left over soy sauce so I took some cabbage and sorrel and heated them up in the left over sauce and that was great too!

    Really great. I tried a mushroom and decided to add a little bit of salt. BIG mistake! I should’ve stuck to the recipe and known the soy sauce would add plenty of saltiness.

    This was great! I love all mushrooms and found a pack of these on sale for $1.99. I usually do the s&p+evoo, but this recipe blew the others away!

    I added some broccoli and garlic and put it over brown rice. I didn’t even miss not having any beef in it. I’ll look to try this as a meat substitute for Mongolian beef next time.

    I really appreciate your recipe! At the last minute I took Annie Chun sticky white rice (V and GF) into microwave for 1 minute)) and combined it at the end on the pan to blend, This is a super easy mushroom and rice dish! I added just a touch of chili garlic sauce in my bowl for a little kick and it was absolutely perfect.

    I was thinking what can I have as an alternative to bacon for breakfast. Tried these mushrooms with grits. Simply amazing and didn’t take long at all. A new breakfast fav, didn’t miss the sausage or bacon!

    The Shiitake mushrooms were so delicious! I didn’t have Sesame oil so uses olive oil with the soy sauce. They were fantastic as my side with our steaks. Thank you! Definitely I will make this recipe again!!
