How To Make Vegan Sweet Potato Soup From Scratch
Since we will be blending the sweet potatoes into a soup, you don’t have to worry about chopping them very small or even. Rough chop will do. Tip: Don’t chop them too big or they will take longer to cook.
The first step of the recipe is to caramelize shallots along with thyme in olive oil.
You can use any oil of choice here. You will only need a small amount, about 2 teaspoons.
I’ve decided to go with shallots vs. onions in the recipe because they are sweeter and have a mild taste.

I love adding fresh thyme to sweet potatoes. Thyme has a subtle aroma and a mild minty flavor that will brighten up our soup. Thyme also has numerous health benefits from killing bacteria to aiding with a sore throat.
Tip: since we will only be using 4 sprigs in our recipe, you can use up the rest of thyme by sprinkling it over salads or adding to smoothies.
After we’ve caramelized shallots and thyme, we will add sweet potatoes and boil them until they are soft.
Do you peel sweet potatoes before boiling them? In this recipe, yes!
After peeling potatoes, reserve about a quarter of peels. We will boil and blend the peels along with potatoes to add an earthy flavor to our soup. Love this trick!
The last step is to blend our tators in a blender.
You all know I recommend my all-time fave – Blendtec. It’s an investment, yes, and it’s so worth it. It will last you a lifetime and it’s the BEST thing I own in my kitchen!
Can You Freeze Sweet Potato Soup?
This Vegan Sweet Potato Soup is perfect as a freezer meal!
Sweet potatoes are naturally creamy and maintains this consistency even after freezing.
You can freeze the sweet potato soup for up to 6 months.

Healthy Sweet Potato Soup recipe that’s ready in 30-minutes! It’s dairy-free and made with only 5 ingredients!
- 2 tsbp olive oil or oil of choice
- 1 shallot
- 4 sprigs fresh thyme
- 4 cups water
- 2 lbs sweet potatoes, peeled and roughly chopped (reserve 1/4 of peels)
- 3 tbsp brown or coconut sugar
- 1/2 tsp apple cider vinegar
- 1 tsp of sea salt, plus more to taste
- 1/8 tsp black pepper, plus more to taste
- 1 tbsp fresh chives, shopped

Heat oil in a large saucepan over medium-low heat. Add shallots and thyme and cook until shallots are soft, about 3 minutes.

Add water, potatoes, and peels and bring to a boil. Partially cover with a lid and continue to cook over medium-high heat until potatoes are cooked all the way through, about 15 minutes.

Off heat. Stir in sugar, vinegar, salt, and pepper. Let cool for 5 minutes.

Discard thyme sprigs. Transfer the mixture into a high-speed blender or food processor and blend/process on a soup setting (60 seconds). Return soup back to the saucepan.

Add more salt and pepper to taste. Add more water if you’d like to thin out the soup.

Serve with chives.

Store in air-tight container in the fridge for up to 5 days.
