Sweet Potato Casserole is the perfect dish for a vegan Thanksgiving dinner! It is smooth, rich, and refined sugar-free and is a holiday show-stopper!
My sweet potato obsession continues into the fall…Fall is the best season to obsess with sweet potatoes because they are sweet, comforting, and reflect orange colors of the fall.
Today, we’ll be making a classic Thanksgiving holiday dish, veganized and, of course, healthier. Making meals vegan and healthy without sacrificing the taste is what this blog is all about!
There are three unique things about this recipe. First is that we will be roasting the sweet potatoes as opposed to boiling them. Many traditional recipes call for boiled potatoes, but I think roasting brings out their unique sweetness. It also adds a ‘roasty’ flavor to the whole dish.
The second unique ingredient is unsweetened applesauce. We will be adding it to our sweet potato mixture which will help bind the casserole together. Non-vegan recipes use eggs to bind the Sweet Potato Casserole, but to veganize the recipe we’ll be using the good ol’ applesauce.

The third unique ingredient in this recipe is pecans. Pecans are everywhere in this recipe! Inside and outside. Most Sweet Potato Casseroles only have pecans on top, but since we are such rebels – we will also be adding them inside the sweet potato mixture. So obnoxious.
We’re making this Sweet Potato Casserole refined sugar-free, so no extra suga here! Sweet potatoes are naturally sweet, plus we’re adding applesauce for a healthy touch of sweetness.
If you’re serving this dish at a Thanksgiving table where some of your guests may have a stronger sweet tooth than you, I recommend serving it with a side of agave syrup. This way, if one of your guests finds that they’d like their casserole a bit sweeter, then they can add agave syrup. See, everyone can be happy. 😊
Sweet Potato Casserole is the perfect dish for a vegan Thanksgiving dinner! It is smooth, rich, and refined sugar-free and is a holiday show-stopper!
- 2 lbs sweet potatoes
- 2 tbsp melted vegan butter such as Earth Balance or 2 tbsp coconut oil
- 1 cup unsweetened applesauce
- 2 tsp ground cinnamon
- ½ tsp allspice
- Pinch of nutmeg
- 1 tsp sea salt
- 1 cup chopped pecans
- Additional cinnamon for topping

Preheat oven to 400 F or 200 C.

Peel sweet potatoes, roughly chop, and bake for 45 minutes. Let cool.

Mash sweet potatoes while they are warm.

Add applesauce, melted vegan butter/coconut oil, and all the spices.

Fold in ½ cup of chopped pecans in the sweet potato mixture.

Transfer to a 9-inch glass baking dish and sprinkle the top with cinnamon and pecans.

Bake for 25 minutes.

Optional: serve with a side of agave syrup if added sweetness.
